Presented as a limited edition starting December 11, 2025, this Yule log is set to make Pavillon Ledoyen an essential destination for the year-end festivities.
For this first creation, Chef Yannick Alléno and Pastry Chef Valentin Mille pay tribute to wood, an emblematic material of the holiday season. Inspired by Yakisugi, the Japanese technique of charred wood, the log is adorned with a deep black hue and a distinctive, singular aesthetic.
A true gourmet sculpture, it celebrates nature, Japan, and art—three beloved sources of inspiration for Chef Alléno.
Beneath its carved-wood exterior, the Yule log reveals an exquisite interplay of textures and flavors: subtly smoked chocolate, the silky lightness of a brown-butter mousse ganache enveloping two layers of biscuit, the crunch of sobacha, and the sweetness of a coffee-infused dulce de leche.
