The Sensory Journey: A Deconstruction of Taste
Far from traditional oenology courses, this session is designed as a journey in three chapters, illustrated by comparative tastings.
I. The Voice of the Earth: Terroir
We begin by laying bare the grape variety. We compare wines vinified in purity (stainless steel vats) with expressions revealed by ageing. You will discover how the influence of the soil imposes its law on Chardonnay and Pinot Noir, even before man intervenes.
II. The Hand and the Mind: The Influence of the Winemaker
If the terroir is the score, the winemaker is the performer. In this second stage, we explore winemaking choices. Through contrasting styles — from delicate infusion to wood-built structure — you will understand how the philosophy of a domaine can transform an appellation.
III. The Breath of Heaven: Climate and Age
Finally, we reach the pinnacle of the Burgundian hierarchy. We will analyse how the vintage and the passing of the years enhance these balances.
